Ingredients:

  • 1/4 cup dragon fruit (mashed)
  • 1 egg
  • 1/2 cup milk of choice
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt (optional)
  • 1 tbsp coconut syrup or maple syrup (optional)
  • 1 tbsp vegetable oil
  • Butter or oil, for cooking

Instructions:

  1. In a medium bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, vanilla extract, dragon fruit, and vegetable oil.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined.
  4. Heat a nonstick skillet over medium heat. Add butter or a small amount of oil to the skillet.
  5. Pour the pancake batter into the skillet, cook until bubbles form on the surface of the pancake, then flip and cook until the other side is lightly browned.
  6. Serve the pancakes with your favourite toppings (peanut butter, honey or maple syrup). Enjoy!
