Ingredients:
- 1/4 cup dragon fruit (mashed)
- 1 egg
- 1/2 cup milk of choice
- 1/2 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt (optional)
- 1 tbsp coconut syrup or maple syrup (optional)
- 1 tbsp vegetable oil
- Butter or oil, for cooking
Instructions:
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, vanilla extract, dragon fruit, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and whisk until just combined.
- Heat a nonstick skillet over medium heat. Add butter or a small amount of oil to the skillet.
- Pour the pancake batter into the skillet, cook until bubbles form on the surface of the pancake, then flip and cook until the other side is lightly browned.
- Serve the pancakes with your favourite toppings (peanut butter, honey or maple syrup). Enjoy!
