Ingredients

  • 1 ripe banana

  • 1 egg

  • 4 tablespoons all-purpose flour

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon vanilla extract

  • Butter for pan frying

Directions

  • In a mixing bowl, mash the ripe banana until it becomes a smooth puree.

  • Add the egg to the bowl and whisk it with the banana puree until they are well combined.

  • Stir in the all-purpose flour, baking powder, and vanilla extract into the banana mixture until it forms a smooth batter.

  • Heat a non-stick pan or griddle over medium heat and melt a small amount of butter in the pan.

  • Spoon the pancake batter onto the pan, making small circles about 2-3 inches in diameter.

  • Cook the pancakes for 2-3 minutes on one side, or until the edges start to dry and bubbles form on the surface.

  • Flip the pancakes over and cook them for an additional 1-2 minutes on the other side until they are golden brown.

  • Repeat the process with the remaining batter until all the pancakes are cooked.
