1 ripe banana
1 egg
4 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
Butter for pan frying
Directions
In a mixing bowl, mash the ripe banana until it becomes a smooth puree.
Add the egg to the bowl and whisk it with the banana puree until they are well combined.
Stir in the all-purpose flour, baking powder, and vanilla extract into the banana mixture until it forms a smooth batter.
Heat a non-stick pan or griddle over medium heat and melt a small amount of butter in the pan.
Spoon the pancake batter onto the pan, making small circles about 2-3 inches in diameter.
Cook the pancakes for 2-3 minutes on one side, or until the edges start to dry and bubbles form on the surface.
Flip the pancakes over and cook them for an additional 1-2 minutes on the other side until they are golden brown.
Repeat the process with the remaining batter until all the pancakes are cooked.
Allow the pancakes to cool slightly before serving them to your baby or toddler.
