Coconut Rice recipe:

Ingredients:

  • 1 cup white rice, 1 cup water
  • 1/2 packet coconut milk powder
  • 2 bay leaves
  • 3 – 4 slices of ginger
  • 1 lemongrass stick
  • 2 pandan leaves

Method:

  1. Place all the ingredients in a rice cooker and cook until done.
  2. Serve warm with Chicken Satay, satay sauce, or other spicy dishes.

Satay Sauce recipe (toddler-friendly & no sugar):

Ingredients:

  • 4 cloves of garlic
  • 4 slices of ginger
  • 1 dried chili (soak in warm water)
  • 1 lemongrass
  • 3 tbsp honey
  • 2 tbsp low sodium soy sauce
  • 1 tsp turmeric powder
  • 1 tsp curry powder
  • 1/4 cumin seeds/powder
  • 4 tbsp ground peanuts
  • 1/2 cup of water (can add more if needed)

Method:

  1. Blend the garlic and ginger, set aside. Brown the garlic, ginger, lemongrass, and dried chili until fragrant.
  2. Add ground peanuts, water, soy sauce, curry powder, turmeric powder, and cook until the sauce thickens. Add more water if the sauce is too thick.
  3. Add honey and a pinch of salt to taste. Remove the lemongrass stick before serving.
  4. Serve warm with satay.

Chicken Satay recipe:

Ingredients:

  • 1 lemongrass stick, white part only
  • Chicken fillets (cut into bite-size pieces)
  • Marinade: turmeric powder, pepper, salt, ginger powder, cornstarch, honey
  • Skewers

Method:

  1. Marinate the chicken fillets with the prepared marinade and skewer them.
  2. Add oil to a pan, pan-fry the chicken satay together with lemongrass until golden brown on both sides.
  3. Serve warm with satay sauce.
