Coconut Rice recipe:
Ingredients:
- 1 cup white rice, 1 cup water
- 1/2 packet coconut milk powder
- 2 bay leaves
- 3 – 4 slices of ginger
- 1 lemongrass stick
- 2 pandan leaves
Method:
- Place all the ingredients in a rice cooker and cook until done.
- Serve warm with Chicken Satay, satay sauce, or other spicy dishes.
Satay Sauce recipe (toddler-friendly & no sugar):
Ingredients:
- 4 cloves of garlic
- 4 slices of ginger
- 1 dried chili (soak in warm water)
- 1 lemongrass
- 3 tbsp honey
- 2 tbsp low sodium soy sauce
- 1 tsp turmeric powder
- 1 tsp curry powder
- 1/4 cumin seeds/powder
- 4 tbsp ground peanuts
- 1/2 cup of water (can add more if needed)
Method:
- Blend the garlic and ginger, set aside. Brown the garlic, ginger, lemongrass, and dried chili until fragrant.
- Add ground peanuts, water, soy sauce, curry powder, turmeric powder, and cook until the sauce thickens. Add more water if the sauce is too thick.
- Add honey and a pinch of salt to taste. Remove the lemongrass stick before serving.
- Serve warm with satay.
Chicken Satay recipe:
Ingredients:
- 1 lemongrass stick, white part only
- Chicken fillets (cut into bite-size pieces)
- Marinade: turmeric powder, pepper, salt, ginger powder, cornstarch, honey
- Skewers
Method:
- Marinate the chicken fillets with the prepared marinade and skewer them.
- Add oil to a pan, pan-fry the chicken satay together with lemongrass until golden brown on both sides.
- Serve warm with satay sauce.
