Broccoli Chickpea Spinach Soup with Salmon

Ingredients:

1 cup broccoli florets
1 can chickpeas, drained and washed
2 cups fresh spinach, chopped
1 fillet salmon, cooked and flaked
1/2 yellow onion, diced
3 cloves garlic, minced
3-4 cups water
Olive oil
Salt, pepper, mushroom powder to taste
Lemon juice

Preparation:

  1. Preheat the oven. Toss broccoli, onion, and garlic with olive oil and salt, then bake until brown and soft.
  2. In a pot, bring water to a boil. Add baked broccoli, onion, and garlic; simmer until tender. Add half of the spinach, cook for 1-2 minutes.
  3. Blend cooked broccoli, onion, garlic, spinach, 3/4 can chickpeas, and 1 cup soup until smooth.
  4. Pour the mixture back into the pot. Add remaining spinach, chickpeas, and cooked salmon. Heat through.
  5. Adjust seasoning with salt, pepper, mushroom powder, and lemon juice.
  6. Serve hot, optionally garnish with herbs or a drizzle of olive oil.
  7. Enjoy your delicious and nutritious soup! Adjust ingredients based on preference. 🙂
