Broccoli Chickpea Spinach Soup with Salmon
Ingredients:
1 cup broccoli florets
1 can chickpeas, drained and washed
2 cups fresh spinach, chopped
1 fillet salmon, cooked and flaked
1/2 yellow onion, diced
3 cloves garlic, minced
3-4 cups water
Olive oil
Salt, pepper, mushroom powder to taste
Lemon juice
Preparation:
- Preheat the oven. Toss broccoli, onion, and garlic with olive oil and salt, then bake until brown and soft.
- In a pot, bring water to a boil. Add baked broccoli, onion, and garlic; simmer until tender. Add half of the spinach, cook for 1-2 minutes.
- Blend cooked broccoli, onion, garlic, spinach, 3/4 can chickpeas, and 1 cup soup until smooth.
- Pour the mixture back into the pot. Add remaining spinach, chickpeas, and cooked salmon. Heat through.
- Adjust seasoning with salt, pepper, mushroom powder, and lemon juice.
- Serve hot, optionally garnish with herbs or a drizzle of olive oil.
