Cocoa Avocado Banana Pancakes

Ingredients

  • 1 ripe banana, mashed

  • 1 ripe avocado, mashed

  • 1 egg

  • 1/4 cup all-purpose flour

  • 1/4 cup cocoa powder

  • 1/2 tsp baking powder

  • 1/2 tsp vanilla extract

  • Milk (optional)

  • Butter or oil for cooking

Directions

  • Combine mashed banana and avocado in a bowl.

  • Add egg and mix.
    Whisk together flour, cocoa powder, and baking powder in a separate bowl.

  • Add dry ingredients to the banana and avocado mixture and stir until just combined. Add milk if needed.
    Stir in vanilla extract.

  • Heat a non-stick pan or griddle over medium heat and melt butter or oil.

  • Drop batter onto the pan to make small pancakes.
    Cook until bubbles form and edges start to set, then flip and cook until done.

    Serve warm with desired toppings (honey, coconut syrup or maple syrup).
