Creamy Potato Carrot Soup
Servings: 1
Ingredients:
- 1 potato
- 1/2 carrot
- 1/2 yellow onion
- 1/2 cup milk
- 1 tbsp plain flour
- 2 tbsp unsalted butter
- Mushrooms powder or salt to taste
- Water or chicken broth for desired consistency
Steps:
1. Peel the potato, carrot, and onion.
2. Melt unsalted butter in a pot over medium heat.
3. Sauté diced onion until translucent.
4. Add diced potato and carrot; cook briefly (4-5 minutes).
5. Pour in enough water or chicken broth to achieve the desired consistency. Simmer until vegetables are fork-tender.
6. Transfer half of the cooked potatoes to a blender and purée until smooth. Stir the purée back into the pot with the remaining soup.
7. In a separate saucepot, melt 1 tablespoon of butter. Stir in the plain flour until smooth. Add the milk, stirring continuously to avoid lumps. Slowly pour this mixture into the potato carrot soup. Bring to a gentle boil, cook and stir for 2 minutes. Season with mushroom powder or salt.
8. Allow the soup to cool, then serve with toast or puff pastry. Enjoy!
