Malaysia Peanut Pancake for Toddlers (12+ Months)

Ingredients:

For Pancakes:

  • 1 egg
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • Cooking oil or butter

For Filling:

  • Softened unsalted butter
  • Ground peanuts

Instructions:

  1. Whisk egg, vanilla extract and milk in a bowl.
  2. Mix flour and baking powder in another bowl.
  3. Combine wet and dry ingredients to make a smooth batter.
  4. Heat oil or butter in a skillet. Pour the batter into a non-stick pan over medium-low heat and spread it slightly to the edge of the pan to make it crispy.
  5. When the batter has formed bubbles and is cooked, tt’s ready to spread butter and sprinkle ground peanuts on top of the pancake.
  6. Wait until the pancake is fried until golden brown, then fold it in half.
  7. Let it cool slightly before serving these pancake foldovers to your toddler.
