Ingredients:

  • 1 1/2 cups self-raising flour
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3 tsp brown sugar (optional)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 apple, peeled and thinly sliced
  • 1 banana, sliced

Instructions:

  1. Preheat your oven to 350°F (180°C) and grease a loaf pan.
  2. In a medium bowl, mix together the self-raising flour, salt, and cinnamon.
  3. In a separate large bowl, cream together the butter, brown sugar, and eggs until light and fluffy. Add the vanilla extract, milk and mix until well combined.
  4. Gradually mix in the dry ingredients. Fold in the diced apples then pour the batter into the prepared loaf pan. Arrange the banana slices on top of the batter.
  5. Bake for 30 – 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Serve and enjoy!
