Avocado Yogurt Pesto Pasta

Ingredients

  • 1 ripe avocado

  • 1 tbsp dried basil

  • 1 tablespoon fresh lemon juice

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup olive oil

  • 2 tablespoons unsweetened plain yogurt (optional)

  • 3 - 4 cherry tomatoes (diced)

  • Your preferred pasta

Directions

  • In a food processor, combine the avocado, dried basil, lemon juice, and parmesan cheese, unsweetened plain yogurt to the food processor. Pulse until smooth.

  • Add the olive oil until the pesto is fully combined.

  • Cook the pasta according to the package instructions.

  • Once the pasta is cooked, drain it and toss it with the avocado pesto and cherry tomatoes.

  • Serve the pasta warm, or chilled. Enjoy!
