Ingredients:

• 5-6 Shiitake mushrooms, sliced
• 3 cloves garlic, minced
• 1/4 yellow onion, minced
• 1 sliced of ginger, minced (optional)
• Minced meat (chicken or pork), marinated with sesame oil, garlic powder, salt, and pepper
• Spring onions, chopped for garnish
• 1-2 tbsp light soy sauce (adjust to taste)
• 1 tsp Mushroom seasoning powder (optional)
• 1 tsp cornstarch mixed with 1/2 cup water

Instructions:

1. Heat a large pan or wok over medium heat and add a bit of cooking oil. Add the minced garlic and onion, and stir-fry for a minute or until fragrant.
2. If using ginger, add the minced ginger to the pan and continue to stir-fry for another minute.
3. Add the marinated minced meat to the pan and cook until it’s no longer pink and is nicely browned.
4. Toss in the sliced Shiitake mushrooms and stir-fry for a few minutes until they begin to soften.
5. Pour in the light soy sauce and mushroom seasoning powder (if using) to the pan. Stir well to coat all the ingredients with the sauce.
6. In a small bowl, mix the cornstarch with water to make a slurry. Pour this into the pan and stir to thicken the sauce. Adjust the thickness by adding more water if needed.
7. Allow the stew to simmer for a few minutes to let the flavors meld together.
8. Taste and adjust the seasoning if necessary by adding more soy sauce or salt and pepper.
9. Once the stew has thickened to your liking, remove it from heat.
10. Serve hot, garnished with chopped spring onions.
