Toddler-Friendly Chocolate Oat Muffins
Ingredients:
• 1 egg
• 1/2 cup milk
• 1/4 cup unsalted butter, melted
• 1 cup all-purpose flour
• 1/2 cup rolled oats
• 2-3 tablespoons honey (optional for sweetness)
• 1 tsp baking powder
• 1/2 tsp baking soda
• 3 tsp cocoa powder
• Handful of chocolate chips (optional)
Steps:
1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease the cavities.
2. In a mixing bowl, whisk the egg. Add milk and melted butter, and mix well. If using honey for sweetness, add it to this mixture.
3. In a separate bowl, combine the all-purpose flour, rolled oats, baking powder, baking soda, and cocoa powder.
4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay. Add chocolate chips to the batter and gently mix.
5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
6. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
7. Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely before serving. Enjoy!
