Ingredients

  • 1/2 small pumpkin, peeled and chopped

  • 1 small onion, chopped

  • 1 clove garlic, minced

  • 1 cup chicken or vegetable broth

  • 1/4 cup milk

  • Salt and pepper to taste (optional)

Directions

  • Sauté onion and garlic with butter in a pot until softened.

  • Add chopped pumpkin and broth, bring to boil and then reduce heat and simmer until pumpkin is tender (15-20 min).

  • Blend the soup until smooth with a hand-held blender or food processor.

  • Return soup to pot and add milk. Heat until warm but not boiling. Add salt and pepper to taste.

  • Serve warm with bread or crackers.
