Cheesy Apple Corn Carrot Muffins recipe:
(makes 10 – 12 muffins)

Ingredients:

• 1 medium Apple, grated
• 1 medium Carrot, grated
• ¼ cup Fresh Corn
• ½ cup Cheddar Cheese, grated (add more cheese for richer flavour)
• ½ cup Milk
• ¼ cup Plain Greek Yogurt
• ¼ cup Vegetable Oil
• ½ tsp Vanilla Extract
• 2 Eggs
• 2 cups Plain Flour
• 2 tsp Baking Powder

Instructions:
1. Preheat oven to 180°C (350°F).
2. In a large mixing bowl, combine grated apple, carrot, and fresh corn.
3. Add cheddar cheese, milk, Greek yogurt, vegetable oil, eggs, and vanilla extract. Stir until well combined.
4. Mix flour and baking powder together, then slowly add to the wet ingredients. Gently fold until just combined.
5. Grease a muffin tray with oil or butter. Spoon the mixture equally into muffin tray.
6. Bake for 20-25 minutes or until cooked through.
7. Allow to cool before serving.
