Tomato Egg and Minced Meat Rice

Ingredients

  • 100g minced pork/chicken

  • 1 small tomato, chopped

  • 1 clove of garlic, minced

  • 1 small onions, minced

  • 1 egg, beaten

  • 1 tbsp oil

  • 1 tbsp light soy sauce

  • 1 tbsp sugar-free /low sodium ketchup

  • 1 tsp cornstarch

  • 2 tbsp water

Directions

  • Heat oil in a non-stick pan, pour in the beaten egg and stir gently until cooked. Set aside. In the same pan, add garlic, onion, minced pork / chicken and cook until brown.

  • Add chopped tomato and cook for 1-2 minutes.

  • Add light soy sauce and sugar-free/low sodium ketchup, stir well.

  • Mix cornstarch and water in a small bowl, then add to the pan. Stir until the sauce thickens.

    Let the dish cool down for a few minutes. Serve warm with cooked rice.
