Tomato Egg and Minced Meat Rice

100g minced pork/chicken
1 small tomato, chopped
1 clove of garlic, minced
1 small onions, minced
1 egg, beaten
1 tbsp oil
1 tbsp light soy sauce
1 tbsp sugar-free /low sodium ketchup
1 tsp cornstarch
2 tbsp water
Directions
Heat oil in a non-stick pan, pour in the beaten egg and stir gently until cooked. Set aside. In the same pan, add garlic, onion, minced pork / chicken and cook until brown.
Add chopped tomato and cook for 1-2 minutes.
Add light soy sauce and sugar-free/low sodium ketchup, stir well.
Mix cornstarch and water in a small bowl, then add to the pan. Stir until the sauce thickens.
Let the dish cool down for a few minutes. Serve warm with cooked rice.
