Creamy Pumpkin Coconut Pasta
Ingredients:
- 1 tbsp oil
- 3 cloves garlic (minced)
- 1 teaspoon fresh ginger (minced)
- 1 cup pumpkin puree (steam fresh pumpkin and mash it)
- 1/2 cup coconut milk
- 3 fresh mushrooms (sliced)
- 1/2 tsp paprika
- 1/2 tsp dried parsley
- 1 cup macaroni pasta or pasta of your choice
- 1/4 cup pasta water
- Pinch of salt (adjust to taste)
- Pinch of pepper (to taste)
Method:
- Cook the pasta following the instructions on the pasta package, set aside.
- Heat the oil in a pan and sauté the minced garlic and ginger until fragrant.
- Add the sliced mushrooms and cook until they become soft.
- Stir in the pumpkin puree, dried parsley and paprika, and cook for about 1 minute.
- Pour in the coconut milk and stir until the mixture thickens. If the sauce is too thick, add a little pasta water to reach your preferred consistency.
- Add the cooked pasta to the sauce and stir thoroughly to ensure the pasta is well coated with the creamy pumpkin sauce.
- Optionally, garnish with dried parsley.
- Serve the creamy pumpkin coconut pasta warm.
