Creamy Pumpkin Coconut Pasta

Ingredients:

  • 1 tbsp oil
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (minced)
  • 1 cup pumpkin puree (steam fresh pumpkin and mash it)
  • 1/2 cup coconut milk
  • 3 fresh mushrooms (sliced)
  • 1/2 tsp paprika
  • 1/2 tsp dried parsley
  • 1 cup macaroni pasta or pasta of your choice
  • 1/4 cup pasta water
  • Pinch of salt (adjust to taste)
  • Pinch of pepper (to taste)

Method:

  1. Cook the pasta following the instructions on the pasta package, set aside.
  2. Heat the oil in a pan and sauté the minced garlic and ginger until fragrant.
  3. Add the sliced mushrooms and cook until they become soft.
  4. Stir in the pumpkin puree, dried parsley and paprika, and cook for about 1 minute.
  5. Pour in the coconut milk and stir until the mixture thickens. If the sauce is too thick, add a little pasta water to reach your preferred consistency.
  6. Add the cooked pasta to the sauce and stir thoroughly to ensure the pasta is well coated with the creamy pumpkin sauce.
  7. Optionally, garnish with dried parsley.
  8. Serve the creamy pumpkin coconut pasta warm.
